Hi,
If I understand your question correctly, yes, Innovator implements this and calls it a "Poly Item".
Go to Administration > ItemTypes and search for "Change Controlled Item". You will see that:
- In the top part of the form, its "Implementation Type" is equal to "Poly Item", meaning it is an abstract ItemType that actually "points to" other ItemTypes
- In the bottom part of the form (the relationships tabs)
- Several tabs are grayed out (again, because a Poly Item is an abstraction)
- The last tab is called "Poly Sources" and this is where the sources are defined (in our example, a Change Controlled Item can be either a Part, or a Document, or a CAD)

I mean, when I create property in Part item type (for exsample), and it has data type "Item", I want to select data source more than one data source for it. And when part item object will be creating, to select value from several data sources.

I have got several data sources, like steel cord, nylon cord, rubber, and all of them must be data sources of material property. ie I have got few material catalogs in library, and want to choose values from them as value of Item property "material".
