if I'm install a Server of ARAS , and I configuring it , like add some new Item types, add new edit forms, add new informations to manage, add new Organization chart, add new Permission policies or workflow, etc. etc. HOW to copy this configuration to another server machine ? Exist some documentation about it ?

I'm not quite sure, but if you are under subscription there are "Package Import Export Utilities" to define all Item / Items Types / Methods, ... to export. Also you con use these utilities to import your package into any other innovator database.
There is also a very good documentation "Aras Innovator Package Import Export Utilities" available.
