I went to Users and then under a user entered in the email address. I can save it, and unlock it, and it is still there but when I close it and reopen it, it is gone.

Is it possible that someone went into the "User" form and edited the "Data Source" for a User?
I would be looking there first. The Data source for the Email on the Form should be "email"
