Yes you can !! Just do it !! You can have multiple default workflow, it is not an exclusive option it just means that they will be started with the item creation.

For Example,,,, if i create a instance of part (BoM), it will flow over the two workflow.
BoM reviewed by designers (Actors and Activity).
Bom reviewed by manufacturers (Actors and Activity).
And one more question.
Can i define parallel activity? for Ex.

Submit > > Approve
................review 2
The two reviews are done parallel.
Yeah you definitely don't need two workflows. You just need one with parallel activities.

If anyone in the group rejected means, after rectifying the mistake again submitted to all group members.
