So at what point, and who, changes the assigned creator name in the document metadata? It still sounds like someone has to go one by one through all the documents and update that field?

As alternative approach:
You can change the property via an AML query or via SQL if you know what to do. Search for AML edit/update to get an idea how the queries may look like.
