Hi, i currently have an existing ItemType that is set to automatic versioning in our Prod environment. The ItemType should've been created with manual versioning. Will updating the ItemType to manual versioning cause any unforeseen issues?

So far I haven´t seen any issues with changing the revision type. I only would be a bit cautious when changing the revision type of the "Workflow" ItemType (it works too, but I would keep an eye on running workflows when modifying workflow maps later).
For other ItemTypes I never had seen any problems. You just need to ensure you are familiar with the alternate ways to create revisions.
If still in doubt, simply test it out in a test database
